A super simple Chicken Yakiudon Recipe

Recipe was given to me from a friend and I added and took away some ingredients!
Serves 2 -3 people
  • 2 packages of udon noodles
  • 1/4 sliced onion
  • 2 oz sliced carrots
  • 4 oz cabbage or any vegetables, chopped
  • 3 -4 chicken thighs (boneless and chopped up into bite size
  • a cup of mushrooms
  1. Boil 2 tbsp of sake and 1 tbsp of sugar, when you see bubble forming, throw in chicken and cook til it begins to brown and is cooked through.  Then put aside.
  2. Mix soy sauce, sake, mirin, and sugar in a small bowl
  3. Put fresh udon noodles in boiling water for 1 minute (follow package instructions for dried udon)
  4. Heat sesame oil in a frying pan and cook onions for 2 minutes
  5. Add carrots and cook for an additional 2 minutes
  6. Add mushrooms and cook for 2 minutes
  7. Add cabbage and cook for 2 more minutes
  8. Add salt and pepper
  9. Add udon noodles and soy sauce/sake/mirin/sugar mixture and stir
  10. Add cooked chicken from step 1.
  11. Add okonomiyaki sauce and stir, then transfer to a serving dish

Very yummy and simple – i think you should slowly add salt, and okonomiyaki to your liking.  And of course add any vegetables, or meat to your liking!  I think the sauce base itself is what makes it taste like yakiudon served at a restaurant.
